This cheesecake is almost beyond words. (But, we’ll try!). We started with a pineapple vanilla crust, gave it a pineapple filling, and topped it with pineapple cream cheesecake. It’s Pineapple on top of pineapple on top of pineapple. It dances on the line of too much, and not enough. This cake screams summer!
